Harvest Potato Salad

I'm so glad that it's harvest season here where I live.  That means I'm finally able to put some of those yummy things growing in my garden (or bought at the local farmers market) to good use.  The other day I whipped up some delicious potato salad for our block party using as many harvested items as I could.

Ingredients:
6-8 medium potatoes (home grown, or purchased from a local farmers market)
3-4 eggs
4-5 strips of bacon
3-4 green onions (fresh from the garden)
Dill weed- to taste (fresh from the garden, or you can use 1-2 tbsp. of dill relish)
Ground mustard, salt, pepper, garlic- to taste
1-2 c. mayonnaise or miracle whip

Directions:
Bake your potatoes and cool.  Once they are cooled completely, peel of the skins, dice and place into your bowl.  Then hard boil your eggs for about 20 minutes and let cool.  Once they are completely cooled peel off their shells, dice and add to your bowl.   
Cook your bacon in a skillet until they are a nice and crisp.  Once they are done cooking place on some paper towels (to absorb some of the grease).  Once they are cooled completely crumble them into bite sized bits and add to your bowl.
Next, continue to add the mayonnaise (or miracle whip) to your salad until it's a consistency that you like.  Finally, add your remaining ingredients (to taste) and enjoy. 

OPTIONAL: Garnish with some paprika and green oinions
